Haryana food includes ghee and butter as
they are home made and is used liberally in their routine diet. The
home made butter is known as nooni ghee and is daily churned fresh in
most homes.

It is observed as a custom for a
girl’s family to give gifts made from butter and ghee such as laddus
and dry fruits when she is on her family way.
Chaaj and buttermilk are favorite
drinks and gives a cool effect. The food in Haryana is considered to be
incomplete without lassi and thandai is known as Kachi lassi.
Thandai is milk based sweet drink.
Fresh vegetables are one of the main attractions of the Haryana
cuisine, especially if it is vegetarian.
Dal is not taken daily and vegetables
that are seasoned lightly are highly preferred.
Tinda and several seasonal vegetables
are a major part of the regular diet.

pethe ki subji, bajre ki khichri and raabri. The food in Haryana is
greatly relished and pickle made of fruits is loved. Some of the
popular food in Haryana is Kachri ki Sabzi, Hara Dhania Cholia, Kadhi
Pakora, Bathua Raita, Bajra Aloo Roti, Tamatar Chutney, Mithe Chawal,
Bhura Roti with Ghee, Kheer, Mithe Chawal, Churma, Malpuas and Besan
Masala Roti with makhan.
